Colston Bassett Stilton – made to an old recipe which calls for traditional animal rennet and hand ladling of the curd. Balanced and elegant with a slight sweet finish.
Westcombe Oxonlees – One of only three traditional cloth-bound raw-milk cheddars still made in Somerset, Oxonlees is a mature profile cheddar which a smooth texture and rich savoury flavour.
Rollright – an English take on a Vacherin Mont D’Or. Soft texture with flavours of crème fraiche and wood smoked ham.
Sinodun Hill – Made in the shape of a pyramid, this goat’s cheese is fresh and light textured with a wrinkly lightly yeasty rind.
